This weeks breakfast and dinner meal prep recipes !

These two recipes are amazing for meal prepping for the busy week coming up..

Meal prepping is super important to achieve your specific goals. It is great to have your food organized and set to focus and avoid falling for outside temptation. Hope you guys like it!


Breakfast

-Breakfast muffin


Ingredients:

•10 eggs

•¼ cup almond milk - (or milk preference)

•1 tsp. salt

•¼ tsp. black pepper

•¼ tsp. garlic powder

•¾ cup spinach thinly sliced

•¾ cup grape tomatoes quartered

•¾ cup cheese shredded


1. Preheat oven to 350 degrees. In a large

bowl combine eggs, milk, salt, pepper,

garlic powder, Whisk

until well combined.

2. Spray a 12-count regular-sized muffin

cup tray with non-stick cooking spray if you don’t have non stick pans.

3. Fill each muffin cup to ½ full with the

egg mixture. Fill each cup with 1

tablespoon spinach, 1 tablespoon

tomatoes, and 1 tablespoon shredded

cheese.

4. Stir the fillings into the scrambled eggs

with a spoon until all ingredients are we

combined.

5. Bake egg muffins in

preheated oven for 22-24 minutes.

6. Serve immediately or refrigerate and

enjoy for up to 3-4 days.


Dinner

- Chimichurri steak and bok choy

Chimichurri ingredients: • 1 shallot - minced • 1 jalapeño • 1 red chili or red pepper flakes • 3-4 garlic cloves Finley chopped • 2 tbsp red wine vinegar • 1 tsp salt • 1 tsp black pepper • 1/2 c Finely chopped cilantro • 1/2 c finely parsley • 2 tbsp finely chopped oregano • 1/2 c olive oil Steak : 1. Add salt to however you like. 2. Depending on how you like your steak cooked I put the stove on high heat (let it heat up first) ,

3. Cook steak for 4-5 min , flip the steak every minute 4. (optional) add 1 tbsp of butter half way through cooking

Bok choy: 1. On medium heat add 2 stocks of bok choy

2. Cook for about 2-3 minutes

3. Add 1-2 tbsp of olive oil & soy sauce to taste. (Cook to however you like)

4. Add your favorite type carb of choice ! ( I recommend sticky rick but its up to you)
